Gluten Free All Purpose Flour Blend

No corn, soy, wheat, rye, barley, dairy or gelatin

The lower fiber version works cup for cup in most recipes I've tried, I especially have good luck with the Better Homes and Garden's cookie recipes.  Biscuits (with the exception of drop biscuit recipes), yeast breads, and pie crusts still don't come out the way I'd like, but your mileage may vary.

Lower fiber version

2 lbs white rice flour
1.5 lbs tapoica starch
1.5 lbs urad flour
1 oz guar gum

Higher fiber version

2 lbs white rice flour
1.5 lbs tapioca starch
1.5 lbs buckwheat flour
2 oz guar gum


Mix well with whisk in large bowl. You can fool around with other flours, like brown rice flour instead of white rice, or subbing sorghum or garbanzo flour for the buckwheat. This happens to work best for me most of the time for the recipes I post here, and for general baking.
